Black Bean Salsa Salad

If you are looking for a hint of summer in the winter that seems to have no end, this recipe is for you.  It is super healthy and requires no cooking.  It is loaded with fiber and protein and has only 400 calories making it a perfect choice for lunch.

 

Black Bean Salsa Salad

Ingredients:

  • 1 cup canned black beans, drained
  • 1/2 cup fresh salsa
  • 1 cup chopped bok choy
  • 1 tsp cumin
  • 1 tsp cayenne pepper 
  • 1/4 cup shredded Mexican cheese
  • 5 tortilla chips

Combine black beans, salsa, bok choy, cumin and cayenne pepper.  Sprinkle cheese on top.  Serve with chips.  Enjoy.
