Sweet Potato Fries - Good and Good for You

Sweet potato fries are easy to make, delicious and packed with good nutrition.

My mother brought 2 sweet potatoes to my house yesterday to bake.  Not a big crowd pleaser for my boys.  So instead of turning the potatoes into mush, I cut them into matchsticks and made oven baked fries.  They were a big success.  Not only were they delicious, sweet potatoes are loaded with good nutrition.  They are an excellent source of dietary fiber, beta-caratene, Vitamins A, B6, C, thiamine, niacin and potassium.  A medium sweet potato has only 130 calories but it is so filling you would swear the calorie count is higher.

Sweet potato fries are easy to make. It is almost impossible to make a mistake unless you overcook them.  Preheat your oven to 425 degrees.  Spray a baking sheet with vegetable oil cooking spray.  Scrub 2 or 3 sweet potatoes (leave skin on). Cut into matchsticks. (slice each potato lengthwise into 1/4 inch ovals, then slice each oval lengthwise into matchsticks)  You can season with salt, cumin, coriander, paprika or any other spice you can think of, or just leave them plain.  Arrange on the prepared baking sheet in a single layer.  Use 2 sheets if necessary.  Spray fries with one more coat of cooking spray.  Bake for 15 minutes or until tender.

Serve hot and watch them disappear.
